Easy Mini Quiche

As you can probably tell, my family loves eggs.  They're nutrious, easy to prepare and delicious any way you cook them.  These mini quiche are great for company, or any special occasion.

EASY MINI QUICHE
Ingredients:
12 slices of bread
1 onion, grated
1/2 cup shredded cheddar cheese
1 cup milk
4 eggs
1 tsp dry mustard
1 pinch of black pepper

Tools:
mini muffin pan
cooking spray
round cookie cutter
cheese grater
small bowl
fork

Instructions:
  • Preheat oven to 375 degrees
  • Spray mini muffin pan with cooking spray
  • Using the round cookie cutter, cut a circle out of each slice of bread, then press 1 circle in each cup of the muffin pan
  • Grate onion using the cheese grater, then sprinkle the onion into each bread cup
  • Sprinkle cheese over the onion
  • In a bowl, stir together the eggs, milk, dry mustard and pepper with a fork
  • Pour a little of the egg mixture into each of the bread cups
  • Bake in oven for 20 minutes

Grilled Cheese

Everyone loves grilled cheese-Especially my kids! Now they can make it for themselves.


GRILLED CHEESE

Ingredients:
-2 Slices of bread
-2 Slices of cheese
-Butter

Tools:
-Frying pan or electric griddle
-Cooking spray
-Butter knife
-Spatula

Directions:
1. Heat the frying pan or griddle on medium heat
2. Spread butter on both slices of bread


3. Place bread, butter side down in pan
4. Add cheese and 2nd slice of bread (butter side up)
5. Cook until golden brown on both sides

Quesadillas

Quesadillas are a great meal for kids to make. They're simple, delicious and you can be creative with the recipe.

QUESADILLAS

Ingredients:
-2 flour tortillas
-1/2 cup shredded cheese

Tools:
-Frying pan or electric griddle
-Spatula
-Pizza cutter

Directions:
1. Preheat frying pan or griddle on medium heat
2. Place 1 tortilla in the pan


3. Sprinkle the cheese all over the tortilla, then cover with the other tortilla
4. Wait until the cheese is melted and the bottom is golden brown,then flip it over with a spatula
5. Cook on the second side until the bottom is golden brown and remove it to a plate
6. Cut it into wedges like pizza slices to serve

The Incredible Edible Egg

Today we made eggs! Lots and lots of eggs!

 
Eggs are the perfect beginner cooking lesson. Today we made them scrambled, fried, hard boiled and in the microwave.  And we made toast to go with them!

 
Here are the recipes I've typed out for their binders.

HARD BOILED EGGS 
Ingredients:
  • 2 eggs

 
Tools:

  • Small Saucepan
  • Slotted Spoon
  • Small Plastic Bowl

 
Directions:
1. Place eggs in a saucepan and cover them with cold water
2. Turn stove to high heat and cook until the water boils
3. Turn off heat, cover with a lid, and let eggs sit in hot water for 20 minutes
4. Remove the eggs from the water with a slotted spoon and place them in a bowl
5. Cover the eggs with cold water and ice until they're cooled

                                SCRAMBLED EGGS
Ingredients:

  • 2 eggs
  • 2 Tbs. milk

 
Tools:

  •  Small Plastic Bowl
  • Tablespoon
  • Fork
  • Cooking Spray
  • Rubber Spatula
  • Small Frying Pan
Directions:
1. Break the eggs into a bowl
2. Whisk in the milk with a fork
3. Spray frying pan with cooking spray
4. Turn stove to medium heat
5. Pour the eggs into the pan and stir egg with a rubber spatula as they cook until they're ready

                             FRIED EGG OVER EASY
Ingredients:
  • 1 egg


Tools:
  • Plastic Bowl
  • Frying Pan
  • Cooking Spray
  • Rubber Spatula
Directions:
1. Gently break an egg into a bowl
2. Spray the pan with cooking spray and turn stove to medium heat
3. Gently pour the egg into the frying pan
4. Heat until bubbly, then gently flip it over
5. Heat until finished and pour onto a plate

                      MICROWAVED EGG SANDWICH
Ingredients:
  • 1 egg
  • 1 Tbs milk
  • 2 slices of bread
Tools:
  • Cereal bowl
  • Fork
Directions:
1. Break an egg into a cereal bowl
2. Stir in milk with a fork
3. Microwave for 45 seconds
4. Use oven mitts to remove the bowl from the microwave
5. Toast bread
6. Place cooked egg between the 2 pieces of toast to create an egg sandwich

                              CINNAMON TOAST
Ingredients:
  • 2 slices of bread
  • butter
  • 1 Tablespoon sugar
  • 1 teaspoon cinnamon
Tools:
  • Butter Knife
  • Measuring Spoons
  • Small Bowl
Directions:
1. Toast bread
2. Spread toast with butter
3. Stir together cinnamon and sugar in a bowl
4. Sprinkle cinnamon-sugar over toast
5. Cut toast in half and enjoy!

Keeping My Kids Busy During Spring Break

My Spring Break project? Teaching my children how to cook! (As well as a couple of their friends) How fun!


I've had the idea for a while and this week at home has given me the perfect opportunity. I've given then all a binder filled with plastic page protectors. I've also typed out simple recipes in large fonts that are easy to read and follow. My plan is to hold regular cooking classes, teaching a new recipe each time. After the lesson, they get to put the recipe in their binder, building their own collection. The page protectors are great because if any food gets on the page while cooking, it can just be wiped off. Here is a picture of our binders.

Lesson 1 covered cooking safety, kitchen rules and making a simple oven baked recipe. The second lesson taught different ways to make eggs. The first few pages of their binder are kitchen rules and safety, as well as a list of cooking tools. Feel free to print out any pages you would like to use. I'm not sure how to attach a document, so for now, you'll just have to cut and paste what I have into a word processor and print from there.

KITCHEN SAFETY

Gas Stove Top

1. Clear stove area of fire hazards
2. Put your pot or pan on burner
3. Turn knob to light stove, then turn to correct flame level
4. Be sure there is always a flame when gas is on
5. Always keep towels and clothing away from the flame
6. Turn burner off when you are finished using the stove


Oven Safety

1. Check oven to be sure it's empty before turning it on
2. Turn oven on and to the correct temperature
3. Use an oven mitt to put food in oven
4. Set timer for cooking
5. Use an oven mitt to take food out when it's finished

Microwave Oven Safety

1. Make sure microwave is empty
2. Use a microwave safe container (no metal)
3. Place food in microwave and start
4. Use an oven mitt to remove food from microwave

Cooking Tools

  • Slotted Spoon-to remove food from a pot of water
