Easy Mini Quiche

As you can probably tell, my family loves eggs.  They're nutrious, easy to prepare and delicious any way you cook them.  These mini quiche are great for company, or any special occasion.

EASY MINI QUICHE
Ingredients:
12 slices of bread
1 onion, grated
1/2 cup shredded cheddar cheese
1 cup milk
4 eggs
1 tsp dry mustard
1 pinch of black pepper

Tools:
mini muffin pan
cooking spray
round cookie cutter
cheese grater
small bowl
fork

Instructions:
  • Preheat oven to 375 degrees
  • Spray mini muffin pan with cooking spray
  • Using the round cookie cutter, cut a circle out of each slice of bread, then press 1 circle in each cup of the muffin pan
  • Grate onion using the cheese grater, then sprinkle the onion into each bread cup
  • Sprinkle cheese over the onion
  • In a bowl, stir together the eggs, milk, dry mustard and pepper with a fork
  • Pour a little of the egg mixture into each of the bread cups
  • Bake in oven for 20 minutes
